Hibachi

 

Hibachi

Hibachi grilling involves cooking foods at high heat over a hibachi grill. Modern grills are typically made of cast iron or aluminum with the cast iron variety generally being of higher quality. A hibachi grill burns charcoal and is designed to sear foods quickly.

History


Hibachi grilling comes from China originally but is often attributed to the Japanese. Early hibachi grills were made of clay lined cypress dugouts but have changed quite a bit since then. Initially only found in the homes of nobility, craftsmen soon began to make more decorative designs with laquered finishes, gold leaf, and artistic designs.

The word hibachi itself is based on the Japanese Hi - Fire and Bachi - Bowl.

Original "hibachi" in Japan doesn't mean a cooking grill but a kind of fireplace or heater, so no Japanese can imagine the use of "hibachi" in the US.

Restaurants

Modern hibachi restaurants usually feature a table wrapping around a good sized grill where many people can eat at once. The hibachi chef performs the cooking in front of the diners at the table and often does so in a flashy manner.
